Our lunch menu is fried beef liver spicy with potato crispy. Many Indonesia'n fried beef liver as with coconut milk, without coconut milk or what I made fried beef liver spicy but separetely with fried potato. After all ready to be served and mix fried beef liver and fried potato. It is tipical of Sambas too.
- 300 gr beef liver, diced.
- 5 shallots, thinly sliced.
- 3 cloves garlic, finely chopped.
- 3 tbsp tamarind juice.
- 2 cm galangal, crushed.
- 2 bay leaves.
- 5 lime leaves.
- 1 tsp salt.
- 2 tsp sugar.
- 3 tbsp dried red chili paste.
- Oil to sautè.
- 2 medium size potato, thinly sliced and fry until golden brown.
Instruction :
- First, we prepare fried potato. Slice potato as thin as possible with widht 2 cm. Fry until golden brown. Set aside.
- Sautè shallot, garlic until fragrant with galangal, bay leaves, lime leaves, salt and sugar.
- Add dried red chili paste, sautè until fragrant and add tamarind juice. Stir until mix well.
- Add beef liver, stir until mix well and cook with medium flame while stirring occasionally until water is dries up. Turn off the flame.
- Mix with fried potato when ready to be served.
