Pan di Spagna is famous Italian Cake. For me, Pan di Spagna is Sponge Cake with little different ingredients. Pan di Spagna added Fecola di Patata or Potato Starch.
- 180 gr sugar.
- 6 eggs.
- A pinch of salt.
- 1 - 2 tsp lemon zest.
- 90 gr all purpose flour.
- 90 fecola di patata.
- 1 tsp baking powder.
Instruction :
- Preheat oven 180°C.
- Smeared baking tray with butter / margarine and sprinkle with flour.
- Mix flour, potato starch and baking powder.
- Whisk egg, sugar and salt until fluffy and thick.
- Add lemon zest and mixture of flour, stir until combine evenly.
- Pour the batter into baking tray and bake until well done for 30 minutes,
