I have extra carrots. My kids love muffin, better I make carrot muffin for our afternoon tea and breakfast tomorrow morning. That not contain much water, the carrots do not boiled but steamed.
- 80 gr all purpose flour.
- 20 gr maizena flour.
- 2 tbsp milk powder.
- 1 tsp baking powder.
- 1/2 tsp vanilla.
- 2 eggs.
- 90 gr sugar.
- 50 gr butter / margarine.
- 200 gr carrot, steamed and mashed.
- 1/2 cup fresh cream.
Instruction :
- Preheat oven 180°C.
- Mix flour, maizena, milk powder, baking powder and vanilla.
- Whisk egg and sugar with whisk hand until sugar melt.
- Add butter / margarine, stir until combine evenly.
- Add mashed carrot, and stir until combine evenly.
- Add mixture of flour, stir until combine evenly and no clot.
- Pour fresh milk and stir until combine evenly.
- Prepare the muffin mould and put paper cup.
- Pour the batter 2/3 into paper cup.
- Bake until well done for 25 minutes.
