Beef Couscous with Many Vegetables

Couscous with pieces of beef and some vegetables as carrot, potato, zucchine and peas.










Ingredients :
  • 400 gr couscous.
  • 500 gr beef, medium diced.
  • 1 carrot, diced.
  • 1 zucchine, diced.
  • 1 medium potato, diced.
  • 50 gr peas.
  • 1 onion, thinly sliced.
  • 3 cloves garlic, finely chopped.
  • 4 cm cinnamon.
  • 3 bay leaves.
  • 2 green cayenne chilies, halved.
  • 1 tsp ground coriander.
  • 1 tsp ground cumin.
  • 1/2 tsp ground nutmeg.
  • 1/2 tsp ground pepper.
  • 4 cardamoms, take seed.
  • 6 cloves.
  • Salt or flavor as needed.
  • 1 tbsp ghee + 1 tbsp vegetable oil.
  • 200 - 300 ml broth or water.
Instruction :
  1. Heat ghee and vegetable oil, sautèr onion and garlic until fragrant.
  2. Add cayenne chilies, coriander, cumin, nutmeg, pepper, cinnamon, bay leaves, seed of cardamoms, cloves and salt or flavor. Sautè until fragrant.
  3. Add beef, stir until combine evenly with spices mix and cooked until runs out water of meat. Then turn low of heat and cook until tender and thick soup.
  4. Add vegetable and cook until half tender.
  5. Add couscous, stir until combine evenly with spices mix, meat and vegetable. Pour broth or water, stir until combine evenly.
  6. Cook with low flame until well done. Ready to be served.
