Potato Muffin

Bread dough mixed with potatoes is common, now I make muffins for snacks my kids with potatoes, turn out soft as well.









Ingredients :
  • 200 gr steam potato, roughly mashed.
  • 80 gr all purpose flour.
  • 20 gr potato starch.
  • 2 tbsp milk powder.
  • 2 eggs.
  • 90 gr sugar.
  • 50 gr vegetable oil.
  • 1 tsp baking powder + vanilla (1 tsp baking powder + 1/2 tsp vanilla).
Instruction :
  1. Preheat oven 180°C.
  2. Mix flour, potato starch, milk powder and baking powder + vanilla.
  3. Whisk egg and sugar with whisk hand until sugar melt.
  4. Add potato and stir until combine evenly.
  5. Add mixture of flour, stir until combine evenly.
  6. Add vegetable oil and stir until combine evenly.
  7. Prepare muffine mould with paper cup. Pour the batter 2/3 paper cup.
  8. Bake until well done.
