I don't know why people call Mud Cake / Kue Lumpur. The cake is soft and moist, good for as snack when tea time. It is Indonesia snack. Original with coconut milk and potato but in my recipe I use fresh milk and no potato. Still soft and moist.
- 75 grs butter/margarine.
- 250 ml water.
- 150 grs all purpose flour.
- 125 grs sugar.
- 1/2 sdt vanilla.
- 1/4 sdt salt.
- 5 eggs.
- 450 ml fresh milk.
Topping :
- Raisins (kismis) as needed, soaked in lukewarm water and drained.
- Simmer water, butter/margarine and flour, whisk quick until combine evenly.
- Add sugar, salt, vanilla and combine evenly, let it cool.
- Preheat mould of mud cake with low fire and rub with butter.
- Add egg, one by one and combine evenly.
- Pour fresh milk and stir until the dough smooth and combine evenly.
- Pour the dough into hot mould and sprinkle with raisins.
- Cover the mould, bake until baked.
- Do it until the dough finish. Served warm.
