Green Jackfruit Curry is Minangese dish (West Sumatera - Indonesia). Served with rice cake or rice when Idul Fitri Feast.
Ingredients :
- 500 grs green jackfruit, sliced 2 cms.
- 200 grs beef bone with some meat, cut small.
- 100 grs long beans, cut 3 cms.
- 100 grs cabbage, sliced.
- 1 lt light coconut milk.
- 500 ml thick coconut milk.
- 1 stalk lemongrass, crushed.
- 3 lime leaves.
- 1 turmeric leaf (skip, I didn't find it in asia shop).
- 2 pcs Asam Kandis (I put Tamarind).
Spices :Grinded
- 1 tbsp red chilies paste.
- 1 - 1 1/2 medium onion.
- 1 tbsp garlic and ginger paste.
- 1/2 tsp ground turmeric.
- 2 cms galangal, crushed.
- Salt and sugar as needed.
Instruction :
- Put green jackfruit, meat beaf, long beans, cabbage, coconut milk, lemongrass, lime leaves, tamarind, galangal, and all grinded spices into pressure cooker.
- Cook until come sound of press cooker and put low fire, cook 15 minutes.
- Turn off the heat and wait until smoke from pressure cooker finish and open.
- Sprinkle with fried shallots. Ready to be served.
