Green Jackfruit Stew Curry

Green Jackfruit Curry is Minangese dish (West Sumatera - Indonesia). Served with rice cake or rice when Idul Fitri Feast.








Ingredients :
  • 500 grs green jackfruit, sliced 2 cms.
  • 200 grs beef bone with some meat, cut small.
  • 100 grs long beans, cut 3 cms.
  • 100 grs cabbage, sliced.
  • 1 lt light coconut milk.
  • 500 ml thick coconut milk.
  • 1 stalk lemongrass, crushed.
  • 3 lime leaves.
  • 1 turmeric leaf (skip, I didn't find it in asia shop).
  • 2 pcs Asam Kandis (I put Tamarind).
Spices :Grinded 
  • 1 tbsp red chilies paste.
  • 1 - 1 1/2 medium onion.
  • 1 tbsp garlic and ginger paste.
  • 1/2 tsp ground turmeric.
  • 2 cms galangal, crushed.
  • Salt and sugar as needed.
Instruction :
  1. Put green jackfruit, meat beaf, long beans, cabbage, coconut milk, lemongrass, lime leaves, tamarind, galangal, and all grinded spices into pressure cooker.
  2. Cook until come sound of press cooker and put low fire, cook  15 minutes.
  3. Turn off the heat and wait until smoke from pressure cooker finish and open.
  4. Sprinkle with fried shallots. Ready to be served.
