Chicken Coconut Milk

Opor Ayam (Chicken with Coconut Milk) is a dish that is very popular in Indonesia. Opor Ayam is claimed to come from civilized regions of Java, especially Central Java and East Java west. Even so, the dish is also known well in other areas.





Ingredients :
  • 1 chicken, cut 8 pcs, cleaned.
  • 3 tbsp vegetable oil.
  • 3 cm galangal, crushed.
  • 3 stalk lemongrass, crushed.
  • 3 lime leaves.
  • 4 bay leaves.
  • 600 mls light coconut milk.
  • 1 tbsp brown sugar.
  • 300 ml thick coconut milk.
  • 1/2 tsp tamarind juice.
  • 2 tblp shallots.
Grinded Spices :
  • 1 medium onion.
  • 6 cloves garlic.
  • 1 tsp ground coriander.
  • 1 tsp ground cumin.
  • 1/4 tsp ground pepper.
  • 2 cms ginger.
  • 4 nutmegs.
  • 2 tsp salt.
Instruction :
  1. Stir fry grinded spices, galangal, bay leaves, lime leaves, lemongrass and salt until fragrant.
  2. Add chicken, stir until change color.
  3. Pour coconut milk, brown sugar, cook until chicken half cooked and add tamarind juice.
  4. Cook until cooked. Ready to be served.
