Eggplant Muffin with Yogurt Mint Sauce

I made muffin with ingredients eggplant and mozzarella. Eat them when still warm...yummy.










Ingredients :
  • 100 gr eggplant, peeled and small diced.
  • 150 gr flour.
  • 3 eggs.
  • 1 tbsp sugar.
  • A pinch of salt.
  • 1/2 cup melt butter or vegetable oil.
  • 1 tsp baking powder.
  • Mozzarella grated as needed.
Instruction :
  1. Whisk egg, sugar and salt until fluffy and thick.
  2. Mix flour and baking powder and add into batter, stir until combine evenly.
  3. Add eggplant and stir until combine evenly. Take some eggplant to be cooked with mozzarella.
  4. Pour melt butter / vegetable oil into batter and mix well.
  5. Pour the batter into silicone muffin mould and sprinkle with mozzarella.
  6. Bake with 180°C until well done for 30 minutes.
Ingredients Eggplant Mozzarella Crispy :
  • Eggplant, peeled and small diced.
  • A pinch of salt.
  • Mozzarella.
Instruction :
  1. Mix eggplant with salt.
  2. Sprinkle diced eggplant onto frypan and sprinkle mozzarela onto eggplant.
  3. Bake until golden brown and mozzarella are crips.
Ingredients of Mint Yogurt Sauce :
  • 250 gr yogurt creamy.
  • 10 gr fresh mint leaves.
  • A pinch of salt.
  • 2 tsp sugar.
  • 2 tbsp olive oil.
Instruction :
  1. Pulse all of ingredients with blender.
  2. Served with eggplant muffin as sauce.
