Eggplant or Terong (in Indonesia Language) is my favorite vegetable. I had cooked many kind dishes with eggplant such as Grilled Eggplant with Fresh Mozzarella, Prawns Eggplant Tom Yum, Grilled Eggplant Sprinkle Grated Cheese and Eggplant Bhorta. With eggplant will be easy to make many thing. Now, I cooked eggplant with soy sauce for our lunch. The first it fried until wilt and then saute with onion, garlic and green cayenne peppers.
- 1 big eggplant, washed and cut.
- 1/2 medium size onion, roughly chopped.
- 2 cloves garlic, finely chopped.
- 5 green cayenne peppers, halved.
- 2 tbsp sweet soy sauce.
- 1/2 tsp salt.
- Oil as needed for fry and saute.

- Preheat oil and fry eggplant until wilt and tender. Transfer to plate and set aside.
- Preheat oil and saute onion, garlic, green cayenne peppers, salt until fragrant.
- Add eggplant and mix evenly.
- Pour sweet soy sauce and mix until combine evenly. Cooked for 5 minutes.
- Transfer to serving plate and give garnish, ready to be served as a side dish.
