Pepes fish is one of the menu of Banjarmasin - South Kalimantan with typical spices. Actually, they use Patin fish, it was a tasty and wrapped with banana leaf produces a very distinctiove aroma and obliged to try...:). But abroad, how to find Patin Fish, so I used Ilis Fish (Bangladesh National Fish). Honestly, I don't like Ilis Fish, not for taste because Ilis Fish so tasty and fragrant. I don't like it because so much small fork in meat of fish. I have solution for the case, I made pepes fish with pressure cooker pan, so the fork would be soft with steamed then grilled until fragrant.
- 4 pieces of fish, cleaned and washed.
- 1/2 tsp ground pepper.
- 1/2 tsp ground turmeric.
- 2 nutmegs.
- 1 cm galangal.
- 1 stalk lemongrass.
- 1/2 medium onion.
- 2 cloves garlic.
- 2 green cayenne peppers.
- Salt is required.
- Coriander leaf is required.
- Basil leaf is required.
- Banana leaf as needed.
- Mashed all of ingredients until puree.
- Marinated fish with spices, let 15 minutes.
- Prepare banana leaf for cover.
- Take 1 sheet of banana leaf, put 1 piece of fish and add 1 tbsp of spices.
- Covered fish with banana leaf. Do it until all of fish and spices finish.
- Prepare pressure cooker pan, steamed pepes for 20 minutes.
- Preheat grilling pan, and grill pepes until fragrant of banana leaf. Ready to be served hot.
