This is one of dish from West Kalimantan / Borneo (Indonesia). With the sour taste of tamarind juice and the spicy taste of dried red chili, the sweet taste you can add some dried anchoies mashed.
Ingredients :
- 10 stems of taro, cut, cleaned and washed.
- 10 grs dried anchovies, mashed.
- 5 grs dried red chili, boiled until tender and easy to chop.
- 1/2 tsp ground turmeric.
- 4 shallots.
- 3 cloves of garlic.
- 1 tsp salt.
- 3 tbsp tamarind juice.
- 3 cms galangal, crushed.
- 1 stack lemongrass, crushed.
- 2 bay leaves.
- Oil for saute spice.
- 1 liter of water.
Instruction :
- Crushed shallots, garlic, dried red chili until puree.
- Heat oil and pour spice, lemongrass, galangal, bay leaves saute until fragrant.
- Add ground turmeric, mix.
- Pour tamarind juice, salt, and anchovies. Mix until well done.
- Add stem of taro, stir fry until mix and half tender.
- Pour water and boil until water boiled and spice absorb to taro. Ready to be served hot as a dish with hot white rice.
