One of famous Japanese snack, Mochi is maden of glutinous flour and stuffing is mung bean or red bean paste. My stuffing is mung bean paste.
Ingredients :
- 500 grs black glutinous flour.
- 750 ml water.
- 100 ml thick coconut milk.
- 1/2 tsp salt.
Ingredients of dust flour :
- 50 grs maizena.
- 1 pandan leaf, cut 3 cm.
Ingredients of mung bean paste :
- 100 grs mung bean, peeled. There is ready for use.
- 75 grs sugar.
- 150 ml fresh milk.
Instruction :
Dust flour :
- Roasted maizena and pandan leaf with low flame for 10 minutes.
- Let it cool
Paste filling :
- Soak mung bean for 1 our, wash and mashed by chopper.
- Mix mung bean, sugar and fresh milk.
- Cook until thick and well done. Let it cool.
- Mix black glutinous flour with water, gradually.
- Put on the thin cloth, squeezed.
- Mix the dough with coconut milk, kneaded until the dough not sticky.
- Devide the dough into small balls, flatten and fill with mung bean paste.
- Round and roll on the cornstarch.
- Do it until the dough finish. Ready to be served.
