This is one of my favorite side dish (Pineapple Sour Spicy Head of Fish). A side dish originated of West Kalimantan - Indonesia. There is sweet, sour and spicy. For me, in this food complete all of flavors.
- 1 head of big/medium fish (me : head of Salmon).
- 1 pineapple, sliced thin (1 cm).
- 1 medium onion.
- 2 cloves garlic.
- 1 tbsp dried red chilies paste.
- 1/2 tsp ground tumeric.
- Salt as needed.
- 2 stalks lemongrass take the white, crashed.
- 2 tbsp tamarind juice as needed.
- 2 bay leaves.
- 2 - 3 lime leaves.
- Oil for sauteing.
- 1 ltr of water.
Instruction :
- Puree onions and garlic.
- Heat oil, saute onion, garlic, dried red chilies, salt, lemongrass, bay leaves, and lime leaves until fragrat.
- Put head of fish into spices and stir well.
- Pour water and cook until boiled.
- Add pineapples, tamarind juice and boil until cooked.
