(Lamb) Kachi Biryani

Biryani is South Asia dish. The dish is prepared maximum time for special event or they invite some guest to lunch or dinner together. Have many kind Biryani. What I have made is Lamb Biryani. I love Lamb Biryani and similiar our Nasi Kebuli from Indonesia.




Ingredients : 
  • 1 - 1 1/2 kg lamb/mutton.
  • 500 grs basmati rice.
  • 1 tomato.
  • 8 pcs cloves.
  • 6 pcs cardamom.
  • 4 cms cinnamon.
  • 1 big onion.
  • 3 cloves garlic.
  • 1 1/2 tsp ground coriander.
  • 1 1/2 tsp ground cumin.
  • 1/2 tsp ground nutmeg.
  • 1 cm ginger.
  • 1 cm galangal.
  • 2 bay leaves.
  • 1 tbsp salt.
  • 750 mls fresh milk.
  • 2 tbsp plain yogurt.
  • 2 - 3 tbspn ghee.
  • Water is required
  • Dried plum as needed.
  • 2 medium size oniiìon, julienne and fry until golden brown.
Instruction :
  1. Blend onion, garlic, coriander, cumin, nutmeg, ginger, cardamom take seeds and tomato.
  2. Put pan on the flame with little ghee.
  3. Saute spices, cinnamon, galangal, cloves, bay leaves, and salt until fragrant .
  4. Put meat into pan and cook until water of meat dry and add fresh milk.
  5. Cook with low flame until meat is tender.
  6. Saute rice with ghee, until rice color become bit yellow.
  7. Pour to meat and mix well with rice.
  8. Add water is required and add dried plum fried onion. Mix until combine evenly.
  9. And cook rice until well done with low fire.
  10. Served with salad.
