White and Yellow Layer Cake

Another one of my granny recipe book about layer cake and originate from Sambas District (West Kalimantan - Indonesia). For good color we use duck egg, because yolk so orange, not like chicken egg only yellow. Egg white with system double boiler to get strong teksture and not quickly liquid.

Ingredients Yellow :
  • 20 egg yolks
  • 200 grs sugar
  • 1/2 tsp vanilla
  • Sweetened condensed milk as needed.
  • Flour as needed.
  • Melted butter as needed.
Instruction :
  1. Whisk yolks, vanilla and sugar until fluffyand thick.
  2. When bake, take 100 grs the dough and add 2 tbsp condesed milk, 1/2 tbsp flour and 1 tbsp melted butter. Stir with teaspoon until blended.
Ingredients White :
  • 20 egg whites
  • 200 grs sugar
  • 1/2 can sweetened condensed milk
Instruction :
  1. Whisk egg whites and sugar until stiff.
  2. Add 1/2 can sweetened condensed milk .
  3. Cook with double boiler pan until get thick the dough.
  4. Remove from double boiler and add 1/2 tbsp flour, mix until blended.
  5. When bake, take 100 grs the white dough for every layer.
How to bake : 
  1. Preheat oven 200°C. Prepare baking tray has been covered wiht baking paper.
  2. The first layer is the yellow dough. Pour the dough into baking tray and bake until cooked.
  3. The second layer is the white dough. Pour the dough on the yellow and bake until cooked.
  4. The last layer is the yellow dough.
  5. Do alternately until the dough runs.
