One of green chili paste Minangese - West Sumatera. If we go to Padang Restaurant, they will serve us foods with green chili paste. I prepared the green chili paste with anchovy.
- 250 gr green cayenne chilies.
- 2 cloves garlics.
- Salt to taste.
- 1 tbsp sugar.
- 50 gr dried anchovy.
- Vegetable oil as needed.
Instruction :
- Heat oil, sautè cayenne chilies and garlic until wilt and garlics got spot.
- Mash chilies and garlic that have withered until destroyed.
- With oil after fried chilies and garlic, fry anchovy until brownish.
- Mix cayenne and anchovy and stir until combine evenly.
- Add salt and sugar, stir until combine evenly. Taste for salt is enough or not.
- Turn off flame and let cool.
