I made cupcake with some eggwhite, because I have extra egg white in my freeze. Soft, moist and beautiful cupcake.
- 100 gr sugar.
- 125 gr flour.
- 100 ml egg whites.
- 50 ml light coconut milk.
- 50 ml olive oil.
- 1 tsp baking powder.
- 1/2 tsp vanilla.
- 1/2 tsp salt.
Instruction :
- Whisk egg whites and salt until half fluffy, add sugar and whisk until fluffy and stiff.
- Mix flour, baking powder and vanilla and pour into egg whites dough gradually and stir gently until blended.
- Pour coconut milk gradually, stirring constantly.
- Pour vegetable oil and mix until blended.
- Preheat steamed pan.
- Pour the dough into muffin tray that have paper cup.
- Put into steamed pan until cooked for 15 minutes.
