Zucchine Muffin

I am happy, my family members love muffin with zucchine what I have prepared for them. Actually zucchine is favorite vegetable of my kids otherwise carrot, potato and broccoli.
I have many extra zucchine in my refrigerator. So better I make some sweet for them snack and breakfast.

Ingredients :
  • 3 whole eggs.
  • 230 gr palm sugar.
  • A pinch of salt.
  • 300 gr all purpose flour.
  • 50 gr maizena (corn starch).
  • 2 tsp baking powder.
  • 200 gr zucchine, wash and steamed until soft and mashed.
  • 120 ml sunflower oil.
  • 80 ml fresh milk.
Instruction :
  1. Preheat oven 180°C.
  2. Whisk egg, palm sugar and salt until thick.
  3. Mix flour, maizena and baking powder.
  4. Added into batter gradually while stirring gently until well blended.
  5. Add zucchine, sunflower oil and fresh milk, stir until well blended.
  6. Prepare muffin mould has been covering with paper cup. Pour the batter use ice cream scoop.
  7. Bake until well done for 25 minutes and test with skewer stick to know well done or not.
  8. Let cool at room temperature and we can prepare zucchine cream.
Ingredients of Zucchine Cream :
  • 50 gr zucchine, steamed and mashed.
  • Whipped cream as needed.
Instruction :
  1. Mix zucchine and whipped cream, beat until thick (soft peak).
  2. If no thick yet, add bit whipped cream and beat until soft peak.
  3. Spread surface of muffin with zucchine cream and ready to be served.
