Ingredients :
- 250 gr all purpose flour.
- 50 gr margarine / butter.
- 30 ml vegetable oil.
- 80 ml lukewarm water.
- 1/2 tsp salt.
- 1/2 tsp sugar.
- Oil for frying.
Ingredients of Stuffing :
- 3 medium size of potato, peeled and small diced.
- 1 breast of chicken, small diced.
- 1/2 medium size onion, finely chopped.
- 2 cloves garlic, finely choppen.
- Salt as needed.
- 1 - 2 green eyes bird chilies (as you like), chopped.
- Parsley as needed, chopped.
- 1/2 tsp ground coriander.
- 1/2 tsp ground cumin.
- 1/4 tsp ground turmeric.
- 1 bay leaf.
- 3 cm cinnamon.
- Oil for saute.
Instruction to make Stuffing :
- Preheat oil, stir fry onion, garlic, salt until fragrant.
- Add coriander, cumin, turmeric, bay leaf, cinnamon, green eyes bird chilies, until fragrant.
- Add chicken and potato, stir until combine evenly and stir fry until chicken and potato mature and tender.
- Add parsley , stir until combine evenly.
- Turn off the flame and set a side.
- While wait for stuffing is cool, we will prepare to make samosa sheets.
- Mix flour, salt and sugar. Preheat oil and add margarine / butter until melt and turn off the flame.
- Add mixture of oil and margarine / butter into mixture of flour, mix until combine evenly.
- Add lukewarm water gradually and knead until smooth and elastic. Set a side for 15 minutes.
- Milled the dough with roller pin as thin as possible and round with 14 cm diameter.
- After milled round and then halved. Take a half sheet and fold triangle to center and unite the border and fold another side and unite the border but the middle leave it open so can fill the stuffing.
- Handheld so that the middle of the open, so fill the stuffing with 1 1/2 tsp stuffing or as needed.
- Press the open side to close the dough. Set aside and do the other the dough and stuffing until finish.
- Preheat vegetable oil to fry. Fry samosa until golden brown.
- Ready to be served with mayonaisse, chili sauce, ketchup.
