Chicken Biryani

I have recipe many kinds of biryani as beef biryani, lamb biryani and pulao. In my blog less one of biryani is chicken biryani.

Ingredients :
  • 1,5 kg ayam, cut and cleaned.
  • 300 gr basmati rice (3 cups).
  • 6 cups hot water.
  • 2 medium onion, thinly sliced.
  • 3 cloves garlic + 1 knuckle of ginger, mashed.
  • 2 medium fresgh tomatoes, roughly chopped.
  • 5 green cayenne chilies, you can add or reduce chilies.
  • 1 tsp ground coriander.
  • 1 tsp ground cumin.
  • 1/2 tsp garam masala.
  • 1/2 tsp ground turmeric.
  • 2 - 3 bay leaves.
  • 4 cardamoms, take seed.
  • 6 cloves.
  • 2 tbsp plain yogurt.
  • Dried prune or raisin as needed.
  • Coriander leaf as needed, roughly chopped.
  • Ghee / vegetable oil / butter / margarine as needed (choose as you like).
Instruction :
  1. Wash basmati rice and drained.
  2. Heat 2 tbsp ghee / vegetable oil / butter / margarine, sautè onion, garlic and ginger, chilies until fragrant.
  3. Add coriander, cumin, turmeric, garam masala, bay leaves, cardamoms and cloves. Sautè until fragrant.
  4. Add tomato and cook until tomato melt, add chicken and yogurt. Cook with high flame until half well done and spices is thick.
  5. Another pan, heat 2 tbsp ghee or other and sautè basmati rice until golden brown. Add hot water and prune / raisin, cook with low flame until half well done and water dries up.
  6. Mix chicken into rice and cook until rice and chicken cook well with as low as possible flame.
  7. When rice is well done, served and sprinkle with chop of coriander leaves and salad.
