Pumpkin Muffin

Halloween come!!! Pumpkin in season... Before I have shared pumpkin curry with achovy. Today I share some cupcake with pumpkin. How to prepare so easy, just use whisk hand. So yummy. My lovely kids love so much.





Ingredients :
  • 2 whole eggs.
  • 200 gr sugar.
  • 150 gr pumpkin, steamed and mashed.
  • A pinch of salt.
  • 250 gr all purpose flour.
  • 50 gr potato starch.
  • 2 tsp baking powder.
  • 120 ml sunflower oil.
  • 100 ml fresh milk.
  • 100 gr pumpkin, steamed and mashed.
  • 3/4 cup whipped cream.
Instruction :
  1. Heat oven 180°C.
  2. Whisk eggs, oil, sugar and salt until foamy.
  3. Mix flour, potato starch and baking powder. Add flour mixture into egg and mix until combine evenly.
  4. Pour fresh milk and stir until combine evenly.
  5. Prepare the muffin mould with paper cup. Take 2 scoope of the batter and pour onto the muffin mould.
  6. Bake until well done for 25 minutes.
  7. Whisk whipped cream with electric whisker until soft peak, add pumpkin mashed and stir until combine evenly.
  8. Put into piping bag and glaze the muffin. Ready to be served.
