Cupcake with Mascarpone Cream

Cupcake with simple ingredients and decorate with soft mascarpone cream then sprinkle with cacao powder. Yummy for breakfast and afternoon snack.

Ingredients :
  • 4 whole eggs.
  • 100 gr sugar.
  • 80 gr flour + 25 gr potato starch.
  • 75 gr vegetable oill.
Instruction :
  1. Warm the eggs and sugar over the medium heat, do not boil. Stirring constantly with a hand whisk until foamy.
  2. After the warm eggs, beat with electric mixer until fluffy and creamy. Add the flour mixture, stirring until well blended.
  3. Pour the vegetable oil, stir until well blended.
  4. Pour the dough on the muffin mould has been covered with a paper cup.
  5. Bake 200°C until golden brown and well done. Let it cool.
Ingredients of Mascarpone Cream :
  • 4 eggs, separete yolks and whites.
  • 500 gr mascarpone.
  • 120 gr sugar.
Instruction :
  1. Put the yolks and sugar in a small saucepan, and heat while stirring with a hand whisk until the sugar melted and mixed with eggs. Stir until mixture is warm and bubbly (do not boil for about 5 minutes).
  2. Then beat by using electric mixer until thick and fluffy.
  3. Add mascarpone gradually, stirring constantly until well blended with the batter and thickens.
  4. In another bowl, reheat the egg whites and salt, stirring constantly with a hand whisk until warm and bubbly. Pour the egg whits into a mixing bowl and beat until stiff with electric mixer.
  5. Mix the egg whites into the mascarpone batter, stirring until blended. If there is water in the beaten egg whites, the water should not be mixed with mascarpone batter, because it will lead to cream melt.
  6. Transfer to piping bag and store in the refrigerator. Ready to use.
  7. Punch a hole through the center of the cupcake and spraid of cupcake with mascarpone cream. Then inlaid top of cupcake and sprinkle with cacao powder.
