Carrot Muffin:

I have extra carrots. My kids love muffin, better I make carrot muffin for our afternoon tea and breakfast tomorrow morning. That not contain much water, the carrots do not boiled but steamed.

  • 80 gr all purpose flour.
  • 20 gr maizena flour.
  • 2 tbsp milk powder.
  • 1 tsp baking powder.
  • 1/2 tsp vanilla.
  • 2 eggs.
  • 90 gr sugar.
  • 50 gr butter / margarine.
  • 200 gr carrot, steamed and mashed.
  • 1/2 cup fresh cream.
Instruction :
  1. Preheat oven 180°C.
  2. Mix flour, maizena, milk powder, baking powder and vanilla.
  3. Whisk egg and sugar with whisk hand until sugar melt.
  4. Add butter / margarine, stir until combine evenly.
  5. Add mashed carrot, and stir until combine evenly.
  6. Add mixture of flour, stir until combine evenly and no clot.
  7. Pour fresh milk and stir until combine evenly.
  8. Prepare the muffin mould and put paper cup.
  9. Pour the batter 2/3 into paper cup.
  10. Bake until well done for 25 minutes.
