Pempek of Rice

Usually, if we prepare pempek that we always add mackerel fish (tenggiri fish) or shrims and chicken. But now, I have much extra boil rice, so I did blog walking. I found a recipe of pempek with an ingredient is boiled rice.
I am interest to prepare it. To make it more tasty, I add garlic paste. And for adaan pempek, I add bit ground dried shrimps.


Ingredients :
  • 1 bowl boiled rice.
  • 1 cup flour.
  • 1 bowl water (bowl boiled rice).
  • 1/2 cup vegetable oil.
  • 1 large size egg, lightly beaten.
  • 1 tsp garlic paste.
  • 200 gr tapioca starch (but depending on the dough, can mor or could be less).
  • A pinch of salt.
  • Water to boil pempek lenjer and kapal selam.
  • Oil to fry pempek adaan.
Instruction :
  1. Mix rice, flour, salt and water into medium sauce pan, stir until combine evenly.
  2. Turn on medium heat and stir constantl until thick. Turn of the heat.
  3. Add oil and garlic paste, stir until combine evenly until the dough is warm.
  4. Add egg and stir until bombine evenly.
  5. Add tapioca starch gardually while knead until smooth and no sticky.
  6. Boil water into large pan and after boiling turn on medium heat. Devided 3 part of the dough for pempek lenjer, pempek kapal selam and pempek adaan.
  7. Pempek lenjer : shape round and long, boil until float. Drained and set aside.
  8. Pempek kapal selam : shape round and flatten the dough and shape as the bag of coins. Add little egg after beaten lightly is required. Moving them together and boil until float. Drained and set aside.
  9. Pempek adaan : Heat flame with oil to deep fry. Take the dough and add ground dried shrimps, knead until combine evenly. Shape small balls and fried until mature and golden brown. Set aside.
  10. If want to serve fried pempek lenjer and pempek kapal selam just moment. And served all of them together with vinegar spicy.
Ingredients of Vinegar Spicy (Saus Cuko) :
  • 1 tsp garlic paste.
  • 2 tbsp brown sugar.
  • 1 tbsp sugar.
  • 10 bird eyes chilies (you can reduce).
  • 1 tbsp ground dried shrimps.
  • 50 gr tamarind mix 500 ml water. Masticated until get tamarind juice. Filtered.
  • A pinch of salt.
Instruction of Vinegar Spicy :
  1. Mix all of ingredients and boil until boiled. Filtered and let cool.
  2. Served with pempek lenjer, kapal selam and adaan.
Instruction to serve :
  1. Fry pempek and put on the serving plate.
  2. Pour the Vinegar Spicy and sprinkle with ground dried shrimps.
  3. Served.
