Soft Cornflakes Muffin

I have much extra cornflakes. No anyone eat it, so better I make some cake or cupcake. Result of blog walking, I found cornflakes muffin. I want to try making it. And all of ingredients complete at home.

Ingredients :
  • 120 gr butter in room temperature.
  • 1 cup sugar.
  • 2 whole eggs.
  • Vanilla essence.
  • 180 gr flour.
  • 1 tsp baking powder.
  • 1 cup cornflakes, finely mashed.
  • 1 cup fresh milk.
  • Topping : almond flakes, roughly raisins.
Instruction :
  1. Preheat oven 200°C.
  2. Mix butter and sugar until combine evenly.
  3. Add egg and vanilla essence, stir until combine evenly.
  4. Add cornflakes and stir until combine evenly.
  5. Add flour, baking powder and fresh milk gradually, while stirring constantly until combine evenly.
  6. Prepare the muffin baking tray and place the paper cup. Pour the batter with ice cream scoope until 2/3 paper cup.
  7. Baked for 20 minutes until mature and ready to be served as snack or breakfast.
