Nian Gao

Chinese New Year does not complete without Nian Gao (Indonesia : Kue Keranjang / Basket Cake). We call basket cake, because when steamed they use small basket as mould.







Ingredients :
  • 2 cup glutinous flour.
  • 2 cup water.
  • 1 cup sugar.
  • 1 cup brown sugar.
  • Plastic heat resistant, so when steamed the plastic is not damage.
Instruction :
  1. Add sugar and brown sugar into sauce pan, and cook until melt and become caramel sugar.
  2. Turn low the heat, pour the water. Becareful, because will flash. The first pour little water then pour all of water. Cook until boil and sugar melt again and mix with water.
  3. Turn of heat and let cool.
  4. After cool, add glutinous flour, stir with whisk hand until combine evenl and no clot.
  5. Preheat steaming pan, put the plastic into small basket with 10 cm diameter and height 5 cm. Pour the batter and steamed. until the batter is set.
  6. Because the batter made of glutinous flour and will be soft and sticky, So to know set or not, put out from basket and steaming pan let fall down on the table. If not wavy meaning set and mature.
  7. Let cool. If you want to fry, let hard and put into freezer for 1 week.
