My friend who original from South Sumatera (Palembang), she gave me recipe how to cook tekwan. It is original food from South Sumatera. Soup with mackerel fish. You can feel aroma of mackerel fish. So yummy.

Ingredients Tekwan :
  • 500 gr mackerel fish, fillet.
  • 250gr tapioca starch.
  • 2 egg whites (so that the tekwan more delicious and not so soft).
  • Salt or flavor to taste.
  • Cold water is required.
  • Water to boil tekwan.
Instruction to prepare Tekwan :
  1. Simmer water until boil.
  2. Mix meat of fish, salt, tapioca starch and cold water. Mix until combine evenly.
  3. Take a little the batter with tablespoon and boiled into boiling water with medium heat until float (it means mature). Remove from water and dries up.
Ingredients Tekwan Soup :
  • Ear mashrooms, soaked into hot water, after soft, cut.
  • 1 yam, julienned.
  • 7 cloves garlic, finely chopped.
  • 200 gr shrimps, peeled, roughly chopped. (Don't thraw the peel, boil with water to prepare tekwan soup).
  • Dried tuberose flower, cut, washed and binded.
  • Ground black pepper as needed.
  • Salt or flavor to taste.
  • 3 tbsp vegetable oil to sautè.
  • 2 lt water to soup (as needed).
Additional Ingredients :
  • Fried shallots.
  • Celery, thinly sliced.
Instruction to prepare Tekwan Soup :
  1. Simmer water with peel of shrimps to prepare shrimps broth. After broth boil, thraw the peel of shrimps.
  2. Sautè garlic until fragrant, add shrimps and stir until redish.
  3. Add salt or flavor and ground black pepper, stir until combine evenly.
  4. Pour the garlic into shrimps broth to prepare of tekwan soup.
  5. Add yam, ear mashrooms and tuberose flower. Cooked until boil.
Instructio to serve :
  1. Take some tekwan and pour the tekwan soup.
  2. Sprinkle with celery and shallot.
  3. Serve warm.
Note : To get chewy of tekwan, depend of your taste. If you feel not so chewy or so soft, you can add the tapioca starch.
