Pempek with Mackerel Fish

South Sumatera Dish is made of tapioca starch and meat of mackerel fish. Mackerel fish is so fragrant. that's why we mix some our cuisine as siomay, tekwan, pempek and etc with mackerel fish. The tender meat and fragrant. Pempek with mackerel fish is original pempek. But now, many varian pempek as pempek dos is pempek fishless.


Ingredients :
  • 1 small bowl mackerel fish, fillet and take the meat of fish.
  • 1 bowl tapioca starch.
  • Salt to taste.
  • 1 clove garlic, mashed.
  • Celery as needed, finely chopped.
  • Water for boiling pempek.
Instruction :
  1. Boiled water until boiling.
  2. Shape the dough for pempek lenjer (elliptical shape), pempek kapal selam (stuffed egg), and adaan (fried pempek).
  3. Boil pempek lenjer and kapal selat until float, transfer to basket and dries up. Set aside.
Ingredients Vinegar Brown Sugar Sauce :
  • 1 clove garlic, mashed.
  • 2 tbsp brown sugar.
  • 1 tbsp sugar.
  • 10 red bird eyes chilies (you can reduce and add, if you like).
  • 1 tbsp mash dried small shrimps.
  • 50 gr tamanrind mix with 500 ml water. Take the juice only, filtered and set aside.
  • Salt to taste.
Instruction :
  1. Mix all of ingredients and simmered until boil. Filtered and let the sauce until cool.
  2. Served with pempek lenjer, kapal selam and adaan.
How to serve :
  1. Fried pempek lenjer and pempek kapal selam after boiled until golden brown. Pempek adaan, after shaped, direcet fried.
  2. Placed on the serving bowl or plate and pour vinegar brown sugar sauce and sprinkle with mashed dried shrimps.
  3. Ready to be served.
