Double Mac Fish Burger Homemade

One week ago, my kids requested me to make fish burger is like before what ever I made for them. Before I made just fish patties and for buns burger I bought from supermarket. Now, I made all are homemade. Better than bought from supermarket, because buns were purchased from supermarket is very dry. When we splitted, trickle bread crumbs. But buns by their mom is soft, moist and smooth texture. They love so much.

Ingredients of Buns Burger :
  • 400 gr bread flour.
  • 150 gr steamed potato, mashed.
  • 1 egg.
  • 3 tbsp vegetable oil.
  • 1 pack dried yeast.
  • 1 tbsp sugar.
  • 1 tsp salt.
  • Luke warm milk as needed.
Ingredients of Fish Patties :
  • 250 gr meat of fish.
  • 1 loaf without edges, cut to small pieces.
  • 3 tbsp fresh milk.
  • 1 tsp salt.
  • 1 tsp sugar.
  • 2 cloves garlic, finely chopped.
  • 1/2 medium size onion, finely chopped.
  • 1/2 tsp ground pepper.
  • 1/4 tsp ground nutmeg.
  • 2 egg yolks.
  • 1 tbsp margarine for sauteing.
  • 2 tbsp vegetable oil + 2 tbsp margarine for frying.
Ingredients of Coating :
  • 2 egg whites.
  • Bread crumbs.
Ingredients of complementary :
  • Cheese sliced.
  • Tomato sauce.
  • Mayonaisse.
  • Lattuce / salad leaf.
  • Olive sliced.
Instruction of Buns Burger :
  1. Mix flour, yeast, salt, sugar, steamed potato, egg and vegetable oil. Stir until well combine.
  2. Pour the lukewarm milk as neede, knead until the dough is smooth and no sticky.
  3. Round and covered with wrap pax. Put into freezer for 1 hour for proofing.
  4. Take the dough from the freezer and knead once until the air runs out.
  5. Milled the dough with thickness 1 cm, cut with round cookies cutter diameter 10 cm or as you like. Put on the baking pan has been covering with baking paper.
  6. Preheat oven 180°C, bake with down flame for 10 minutes. Then baked with up flame until mature and golden brown all of surface.
  7. Remove from the oven and spread with butter surface of buns. Let them cool.
Instruction of Fish Patties :
  1. Mix the loaf with milk, stir until the loaf is soft.
  2. Mix with the meat of fish. Add salt, sugar, pepper and yolk. Stir until well combine.
  3. Preheat margarine and stir fry onion, garlic and nutmeg until fragrant. Pour into the dough of fish and stir until combine evely.
  4. Preheat oil and margarin for frying. Take the patties dough, round up and flatten.
  5. Dip into white egg and coated with bread crumbs.
  6. Fry until golden brown. Do until the dough of patties finish. Set aside.
Instruction to prepare Fish Burger Homemade :
  1. Halved buns for burger.
  2. Spreas with mayonaisse, put the lattuce / salad leaf, fish patties, cheese sliced, olive sliced, fish patties, lettuce / salad leaf and tomato sauce. And covered with other half buns. Because the double mac fish burger so you put the double fish patties.
  3. Ready to be served.
