Steamed Sponge Cake Such Bloom


The first time, I success to make steamed sponge cake such bloom without the cake emulsifier. I have tried and try again many time. The surface always around, not such bloom. Two days ago, I success to make them such bloom. So happy. To make the steamed sponge cake, we add the cake emulsifier, but here difficult to find it. So, for the solution, I add more the yolk. Because to get bloom need so thick the batter. Taddaaaa...Sponge cake such bloom.

Ingredients :
  • 225 gr castor sugar.
  • 3 big yolk + 1 whole egg.
  • 1 tsp baking powder - vanilla
  • 50 gr milk powder.
  • 200 gr all purpose flour.
  • 150 ml soda water.
Instruction :
  1. Preheat the steaming pan until water boiled well.
  2. Whisk the eggs and sugar until so thick and fluffy.
  3. Mix flour, baking powder and vanilla.
  4. Add the mixture of flour and soda water alternately until exhausted while stir with spatula unil combine evenly.
  5. Take 4 tbsp the batter and pour the color.
  6. Place the paper cup on the muffin mould and pour the white butter 3/4 of paper cup, and pour 1 tsp the color batter.
  7. Steam for 10 - 15 minutes until mature with the high flame. Don't open  until mature.
  8. Open the steaming pan and remove the steam sponge cake on the serving plate. Ready to be served.
