Rice Cake (Apem Nasi)

There were still many remaining rice, rather harden and I don't want to discard the rice...let's be creative in the kitchen by making a cake made from rice and we call Apem Nasi. Why apem, because usually cake is added baking powder but the apem cake is added dried yeast to proofing. Original apem cake, added the rice flour only. Let start to try it

Ingredients :
  • 1 cup boil rice already.
  • 1 cup all purpose flour.
  • 1 cup rice flour.
  • 1 tsp dried yeast.
  • 1 cup castor sugar.
  • 1 cup fresh milk / coconut water / water. (I added fresh milk).
  • Cocoa powder or brown food coloring. (I added cocoa powder).
Instruction :
  1. Preheat the steaming pan until water is boiling, while wait for boiling water we can make the apem batter.
  2. Pulse the boiling rice, sugar and fresh milk until smooth.
  3. Mix all purpose flour, rice flour, yeast in the bowl and stir until combine evenly.
  4. Pour the smooth rice into mixture of flour and stir until combine evenly and smooth, no clot. Let rest for 1 hour.
  5. Devided two the batter, half of batter added cocoa powder as needed.
  6. Pour into the muffin cup has been smeared vegetable oil, steamed for 20 minutes until mature.
