Rainbow Tapioca Layer Cake

It is an Indonesia traditional layer cake. Made with tapioca starch. I made rainbow, because I want my kids to eat it. But only my girl kids love it, my boy kids no. If we eat warm so soft, after cold we need put inside steaming pan again, before we eat. Yummy tapioca layer cake (Lapis Pepe)

Ingredients :

  • 350 gr tapioca starch.
  • 2 tbsp rice flour.
  • 750 ml fresh milk.
  • 300 gr sugar.
  • 1/2 tsp vanilla.
  • 2 pandan leaf, binded.
  • A pinch of salt.
  • Food color : purple, blue, green, yellow , orange and red.
Instruction :
  1. Boil fresh milk and pandan leaves until boiled. Set a side until warm
  2. When fresh milk is warm added all of ingredients, except food color, stir until combine evenly and no clot. 
  3. Devided 6 small bowls and pour any colors.
  4. Preheat steaming pan, until water is boiling.
  5. Prepare baking tin and smear with oil and then placed into steaming pan.
  6. Every color is for two layers. Pour with ladle is half of the batter with color purple and steam for 5 minutes. And pour again with last purple batter, steam for  5 minutes. Do the same with all of batter until finish.
  7. Transfer to serving plate. To cut, you should use knife is wrapped with plastic, if not, you would have trouble to cut nicely
