Vegetables with Coconut Milk Soup

When Eidul Fitr is not complete if withour Lontong Sayur (Rice cake with vegetable coconut milk soup / sayur lodeh). For Lontong Sayur is not only lontong (rice cake), sayur lodeh (vegetable coconut milk soup), but have some other side dishes such as hard boiled egg, sambal bajak (stir fried chili paste), serundeng (stir fried grated coconut savory), opor ayam (chicken coconut milk) and sambal goreng hati sapi (fried spicy beef liver). With all of dishes, we call Lontong Sayur.
Now, I want to share how to make Sayur Lodeh (Vegetable with Coconut Milk Soup). For other dishes, you can click the link to get the recipes.

Ingredients :
  • 400 ml thick coconut milk.
  • 200 ml water.
  • 2 medium size zucchine, medium diced (original added squash).
  • 3 carrots, medium diced.
  • 8 long beans, cut 3 cm.
  • 250 gr beef with bone.
  • Salt is required.
  • 2 bay leaves.
  • 2 cm galangal, crushed.
  • Oil for sauteing.
Grinded Spices :
  • 1 medium size onionù
  • 3 cloves garlic.
  • 1/2 tsp shrimps paste.
  • 1/2 tbsp sugar.
  • 1 tsp salt.
  • 1 tsp ground coriander.
Instruction :
  1. Preheat oil for sauteing, saute grind spices bay leaves galangal and salt until fragrant into medium pan.
  2. Pour coconut milk and water, boiled until boiling. Add beef with bone until tender.
  3. Add all of vegetable, and cook until vegetable is tender.
  4. Ready to be served with lontong (rice cake), sambal bajak, opor ayam, etc... And we call lontong sayur.
