Pumpkin Kolak

Kolak is Indonesian's dessert. Actually you can find it when Ramadhan as ta'jil for break fasting. There are many kind kolak such as banana kolak, pumpkin kolak, casavas kolak, sweet potato kolak...etc. To make kolak so easy, you need coconut milk, brown sugar (palm sugar). The pumpkin kolak, I made for my iftar when last Ramadhan.

Ingredients :
  • 500 ml coconut milk.
  • 100 gr brown sugar (palm sugar).
  • 200 gr pumpkin.
  • 1 pandan leaf.
Instruction :
  1. Diced pumpkin, washed and drained.
  2. Mix coconut milk, pandan leaf and brown sugar and simmer until  boil and brown sugar melt. Stirring occasionally.
  3. Add pumpkin and boiled until pumpkin is tender.
  4. Ready to be served.
