Cendol Azzuro

Cendol is traditional beverage from Indonesia. Consists of rice flour, tapioca starch and mung bean flour (hun kwee flour). For serving, pour with coconut milk and brown sugar sauce. Yummy drink cold with cube ice, specialy when hot season or break fasting. How to make so easy.

Ingredients cendol :
  • 25 gr rice flour.
  • 25 gr tapioca starch.
  • 25 gr mung bean flour (hun kwee flour).
  • 2 tsp sugar.
  • 300 ml water.
  • Food colour.
  • 1,5 lt cold water from freezer.
Ingredients coconut milk :
  • 1 lt coconut milk.
  • 1/2tsp salt.
  • 1 pandan leaf.
Ingredients brown sugar sauce :
  • 250 gr brown sugar / palm sugar.
  • 2 tbsp sugar.
  • 50 ml water.
Instruction :
  1. Prepare coconut sauce : Pour coconut milk into pan, add salt and pandan leaf. Simmer until boil with low flame and stirring occasionally. Set aside.
  2. Prepare brown sugar sauce : Add brown sugar, sugar and water into small pan, and simmer until sugar melt.
  3. Prepare cendol : Mix rice flour, tapioca starch, mung bean flour, sugar, water into small pan. Pour water gradually until smooth and  pour green food colour or as you like.
  4. Simmer on low fire until boil and thick. Turn off flame.
  5. Prepare a medium bowl with cold water. Take a filter with many hole and the put the dough, press until pass from hole and fall down on the cold water. Let it hard.
  6. How to serve : Take cendol and put into glass or small bowl. Pour coconut milk sauce and pour brown sugar sauce. If you like you can add ice cube for more cold. Ready to be served.
