Cay Kwee (Chinese Steamed Dumpling)

One of Chinese Steamded Dumpling. So familiar in my hometown. Made of rice flour, tapioca starch. To make the dumpling with steaming system. Eating with sprinkling of fried garlic with oil and sour chili sauce.






Ingredients of Dumpling :
  • 100 grs rice flour.
  • 25 grs tapioca starch.
  • 3 tbsp vegetable oil.
  • Salt is required.
  • 300 ml water.
  • Oil for spreading.
  • Banana leaf for base the dumpling steamer.
Ingredients of Stuffing :
  • 200 grs taro roots, shredded.
  • 25 grs dried shrimps, soaked in water, drain.
  • 3 cloves garlic.
  • 15 grs garlic chives, cut 2 cms.
  • 1/2 tsp ground black pepper.
  • Salt is required.
  • Oil for sauteing.
Additional :
  • Fried Garlic with oil.
  • Sour chili sauce.
Instruction :
  1. Prepare stuffing. Pulse garlic and dried shrimps. Preheat oil, stir fried garlic, dried shrimps and salt until fragrant. Add taro roots and garlic chives, stir fry until tender and well done. Set aside.
  2. Prepare dumpling. Pour rice flour, tapioca starch, salt, and vegetable oil, mix completely.
  3. Pour water gradually and stir gently until combine evenly.
  4. Simmer on the low flame and stirring constantly until thick. Let it cool.
  5. Prepare a transparant plastic and rubbed with oil for flatten and round the dough. Put stuffing on the middle and fold other side to cover stuffing. Press the border well and put on the banana leaf as base.
  6. Preheat steam pan. Put dumpling into steam pan for 10 minutes until dumpling cooked.
  7. Transfer to plate and sprinkle with fried garlic and oil.
  8. Ready to be served with sour chili sauce.
