Semar Mendem

Semar Mendem is traditional cuisine from Solo (Center Java). The main ingredients are white glutinous rice and coconut milk. But when I made it, I didn't find white glutinous rice in asia store. I got only black glutinous rice. So, I give name Semar Mendem Black Glutinous Rice. For filling I put shredded chicken and diced potato, covered with wrapped the thin omelet.


Ingredients :
  • 250 grs black/white glutinous rice, soaked 1 hour.
  • 500 ml light coconut milk.
  • 3 bay leaves.
  • 1 lemongrass, crushed.
  • Salt is required.
  • Pandan leaf, if like to cook glutinous rice.
Ingredients of Omelet :
  • 4 eggs, beat lightly.
  • A pinch of salt.
  • 50 ml water.
  • Mix until blended and fried as thin as possible.
Ingredients of Filling :
  • 2 pcs chicken breast, boiled and shredded.
  • 1 medium potato, diced.
  • 2 lime leaves.
  • 2 cloves garlic, roughly chopped.
  • 250 ml fresh milk.
  • A pinch of salt.
Instruction :
  1. Soak glutinous rice within 1 hour, than washed. Cook with coconut milk and pandan leaf until cooked with low flame.
  2. Saute garlic and lime leaves until fragrant. Add potato and salt stir until mix and half tender.
  3. Pour fresh milk and add shredded chicken. Saute until cooked and milk absorbs. Turn of flame and let it cool.
  4. Take 1  1/2 tablespoon of glutinous rice and flattened on the transparant plastic.
  5. Put filling of saute chicken and potato.
  6. Roll the dough of glutinous rice.
  7. Take 1 sheet of omelet. Put on the plate, and put glutinous rice roll on the middle.
  8. Fold omelet like envelope and roll.
  9. Do it until finish the dough or omelet.
  10. Give garnish with pandan leave to bind it.
  11. Ready to be served.
