Strawberry Mousse Pie

Spring season, begin many kinds of fruits will be easy to find. I made some fresh dish such as pudding. I have Jelly Strawberry and fresh strawberry. So, today I prepared mousse with strawberry with base mashed rice crips.






Ingredients :
  • 300 gr crisp rice or corn flake.
  • 2 tbsp butter, room temperature.
  • 10 fresh strawberry.
  • 2 packs of strawberry jelly.
  • 1/2 cup cold water.
  • 3/4 cup sugar.
  • 1 tbsp lemon juice.
  • 2 cups whipped cream.
  • 2 cups water.
Instruction :
  1. Pulse crisp rice or corn flake with food processor until smooth.
  2. Prepare round baking tray. In the medium bowl, mix crisp rice and butter, stir until combine evenly.
  3. Pour the dough into baking tray and spread the dough to the entire surface of base baking tray. Store in the refrigerator.
  4. While wait for base is hard, pulse the fresh strawberry with food processor. Add sugar and lemon juice. Stir until combine evenly.
  5. Add 1 pack of jelly into cold water and let stand for 5 minutes. Cook with double boiler system until jelly melts.
  6. Mix jelly into strawberry and stir until combine evenly.
  7. With other bowl, beat whipped cream until soft peak. Mix with the mixture of strawberry and stir until combine evenly.
  8. Remove base from freeze, pour the strawberry mouse onto base dough and store again into freezer
  9. While wait for mousse is dry, boil water and jelly powder until boiled and thick.
  10. Wait until warm and pour slowly on the strawberry mousse.
  11. Store into freezer again for 3 hours or more. Ready to be served when cold.
