Got a lot of stock of broccoli, because they are cheap now. So for our lunch, I cooked pasta with broccoli sauce. The broccoli sauce is mixed with fresh tomato that has been melted and then blended with soft boiled broccoli.
Ingredients :
- 250 gr fusili.
- 5 big florets of broccoli.
- 1 medium size of fresh tomato, roughly chopped.
- 1/2 medium size of bombay, thinly sliced.
- 2 cloves of garlic, finely chopped.
- 2 green cayenne peppers, halved.
- Parmesan cheese, grated.
- Salt to taste.
- Oil to fry.
Instruction :
- Boil water with salt and oil. After water has been boiling add pasta and boiled until soft or al dente.
- With small sauce pan, boil water. After water has been boiling add broccoli and boiled until soft.
- While waiting for pasta tender, sautè onion into pan until soft. Add garlic and cayenne pepper and stir until fragrant.
- Add tomato and stir until melt. After broccoli is soft, remove from water and mix with tomato and salt. Stir until broccoli and tomato destroy.
- Transfer to food processor or blender, and make sauce.
- Pour into pan again and add 2 tbsp parmesan cheese, mix until combine evenly.
- Add pasta and stir until combine evenly.
- Transfer to serving plate and sprinkle with parmesan cheese, ready to be served.
