Yesterday, I have posted Bakakak Chicken. When I grilled Bakakak Chicken I cooked Liwet Rice too. Both of two are dishes of Sundanese (West Java - Indonesia). Liwet Rice is sautè rice with onion, lemongrass and other spice. After that mix with Sautè Dried Fish. Easy to cook and prepare.
Ingredients :
- 300 gr rice, washed and dried up.
- 1/2 red onion, thinly sliced.
- 1 stalk lemongrass, crushed.
- 1 bay leaf.
- 2 tbsp vegetable oil for sautèing.
- Water as needed.
- Salt to taste.
Instruction to prepare Liwet Rice :
- Sautè red onion, bay leaf in pan to cook rice, until fragrant.
- Add rice, salt and lemongrass, stir until combine evenly.
- Pour hot water a knuckle over the rice. Cook until boil while stir occasionally so doesn't burn.
- After water bit dries, put low flame and cover the pan.
- When rice is bit well done add sautè dried fish and mix until combine evenly with rice.
- Cook rice until well done.
- 200 gr dried fish, washed and cut small pieces and fried until crunchy.
- 1/2 red onion, thinly sliced.
- 3 red pepper, thinly sliced (skip).
- 1 green pepper, thinly slice (skip).
- 5 green bird eyes chilies, halved. You can reduce or add as you like.
- 2 tbsp oil for sautèing.
- A pinch of salt.
Instruction to sautè Dried Fish :
- Heat oil, stir fry red onion, red pepper, green pepper, bird eyes chilies and salt until fragrant.
- Add dried fish and mix until combine evenly with spices.
- Turn of the flame and ready to mix with Liwet Rice.
