Potato Aranchini

Usually aranchini made by risotto. But, I did modification, I made with mashed potato and stuffed mozzarella. Eat with chili sauce for our snanck.

Ingredients :
  • 1 kg potoato, peeled and fried.
  • Fried shallot as needed.
  • Celery, finely chopped.
  • Salt to taste.
  • 2 egg yolks.
  • 1 tbsp parmesan cheese.
  • Mozzarella, make as small marble.
  • Bread crumbs as needed.
  • 2 egg whites.
  • Oil for deep frying.
Instruction :
  1. Peeled potato, sliced and fried until golden brown. Mashed until smooth.
  2. Mix with fried shallot, celery, salt, yolk and parmesan cheese. Mix until combine evenly.
  3. Take a bit potato, and round up. Press the middle by index finger and stuffed mozzarella, round up again as ball. Set aside. Do until finish.
  4. Heat oil for deep fry. Coated with bread crumbs and dipped to egg white and coated again with bread crumbs.
  5. Fried until golden brown and served with chili sauce.
