Usually aranchini made by risotto. But, I did modification, I made with mashed potato and stuffed mozzarella. Eat with chili sauce for our snanck.
Ingredients :
- 1 kg potoato, peeled and fried.
- Fried shallot as needed.
- Celery, finely chopped.
- Salt to taste.
- 2 egg yolks.
- 1 tbsp parmesan cheese.
- Mozzarella, make as small marble.
- Bread crumbs as needed.
- 2 egg whites.
- Oil for deep frying.
- Peeled potato, sliced and fried until golden brown. Mashed until smooth.
- Mix with fried shallot, celery, salt, yolk and parmesan cheese. Mix until combine evenly.
- Take a bit potato, and round up. Press the middle by index finger and stuffed mozzarella, round up again as ball. Set aside. Do until finish.
- Heat oil for deep fry. Coated with bread crumbs and dipped to egg white and coated again with bread crumbs.
- Fried until golden brown and served with chili sauce.
