Srikaya Gratin


Srikaya is made from sweet potato grated, mixed with coconut milk / milk, and brown sugar. Then steamed. The recipe is my lovely mom recipe. Why I named Srikaya Gratin ??? Actually my mom gave name is Sweet Potato Srikaya. Gratin means rough shredded (French). Because the Potato is grated roughly, be named Srikaya Gratin. Nom...nom...our childhood snack.


Ingredients :
  • 300 gr sweet potato, roughly grated.
  • 500 ml coconut milk / fresh milk.
  • 2 1/2  tbsp brown sugar.
  • 1 tbsp sugar.
  • 1/4 sdt salt.
  • 3 egg, lightly beaten.
  • 2 pandan leaves, binded.
  • Margarin / butter for greasing.
  • Raisins as a topping.
Instruction :
  1. Dissolve brown sugar, granulated sugar, salt and eggs in coconut milk / fresh milk.
  2. Add the sweet potato and pandan leaves and stir until combine evenly.
  3. Heat the steamer pot  untl the water is boiling.
  4. Use the heat resistant pot, spread with the butter / margarine.
  5. Pour the mixture  sweet potato into a heat resistang pot and steam for 1 1/2 hours or until mature.
  6. Allow to cool at room temperature and ready to be served.

      I used sweet potato orange. Both of two taste good. But here in Italy, difficult to find the sweet potato purple.
