Mushroom Chicken Noodles Pangsit

Viewing post of friends in one of the social media, so I also wanted to make chicken noodle. Especially the weather support to cook it as cold, rain and strong winds. Incidentally, there are still stock of dried mushroom. So today I made mushroom chicken noodles, with chicken claw broth as soup. And the fried chicken skin to get the oil. Then the oil is used to boil the noodles.

Ingredients of Chicken Noodles :
  • 4 instant noodles.
  • 2 chicken claws.
  • Ear mushroom as needed.
  • 1 large chicken breast, diced.
  • Celery as needed, chopped.
  • 2 tbsp thick soy sauce.
  • Oil for frying.
  • Water to make broth.
  • Salt or flavor.t
Ingredients of Ground Spices :
  • 1 medium size onion.
  • 2 clove garlic.
  • 1/2 tsp ground pepper.
  • 1 knuckle ginger.
  • 1/2 tsp sugar.
Ingredients of Sesame Pangsit :
  • 3/4 cup semolina.
  • 1/4 cup all purpose flour.
  • 1/8 tsp baking powder.
  • 1/2 cup lukewarm water. 
  • Oil for deep frying.
  • 2 tsp black sesame. (Optional).
  • Salt to taste.
Instruction to prepare Chicken Noodles :
  1. Prepare the broth :Boil water until boiling, add chicken claw and salt / flavoring. Boiled again for 15 minutes.
  2. Stir fry until fragran ground spices and pour into boiling broth chicken claw. Cook until broth thickens.
  3. With other pan, boil the water until boiling, then boil mushroom until soft and drain. Cut the mushroom into small pieces. Combine the broth, boiled until boiling. Set aside.
  4. Prepare the soy sauce chicken : Saute ground spices (1/2 onion, 1 clove ginger, 1 cm ginger) until fragrant. Add thick soy sauce and chicken. Stir until dried and the oil out. Turn of the flame and  set aside.
  5. Boil water until boiling, and add chicken oil from fried chicken skin and boil noodles until tender. Drained.
  6. Serving : Put the noodles into serving bowl, then add the broth, add the soy sauce chicken, sprinkle with celery and add the pangsit. Ready to be served with soy sauce, chili sauce and ketchup.
How to prepare Sesame Dumplings :
  1. Mix the semolina, flour, baking powder, salt and sesame. Stir until combine evenly.
  2. Pour lukewarm water, stirring until smooth and not sticky to the touch.
  3. Heat the oil for frying.
  4. Sprinkle with a little flour, Take a little the dough and milled until thin, then cut into pieces.
  5. Frying until golden brown.
