Eggplant Bruchetta

I have some eggplant. The Italian eggplant is large and short. While the Indonesian eggplant is long. Coincedence I just watched the tv channel, and I saw how to make bruchetta use eggplant. So easy and I made direct to follow how to make.Usually bruchetta made with bread and cut into pieces. Unique make bruchetta with eggplant.

Instruction :
  • 1 eggplant, peeled and cut into 1 cm thickness.
  • 1 tsp ground pepper.
  • Salt to taste.
  • 3 tbsp water.
  • Basil cream (mixture of basil, plain yogurt, cheese and salt in a blender).
  • Tomatoes, seede and cut into small dice.
  • Breadcrumbs.
  • 1 whole egg, light beaten.
  • Oil for frying.
Instruction :
  1. Heat the oil for frying.
  2. Mix the ground pepper, salt and water. Dipped eggplant that have been cut.
  3. Dipped into beaten egg and coated with breadcrumbs the entire surface of the eggplant.
  4. Fry until golden brown. Drain.
  5. Give a teaspoon basil cream on top of fried eggplant and give a sprinkling of small tomatoes diced.
  6. Ready to be served as snack.
