Instruction :
- 1 eggplant, peeled and cut into 1 cm thickness.
- 1 tsp ground pepper.
- Salt to taste.
- 3 tbsp water.
- Basil cream (mixture of basil, plain yogurt, cheese and salt in a blender).
- Tomatoes, seede and cut into small dice.
- Breadcrumbs.
- 1 whole egg, light beaten.
- Oil for frying.
Instruction :
- Heat the oil for frying.
- Mix the ground pepper, salt and water. Dipped eggplant that have been cut.
- Dipped into beaten egg and coated with breadcrumbs the entire surface of the eggplant.
- Fry until golden brown. Drain.
- Give a teaspoon basil cream on top of fried eggplant and give a sprinkling of small tomatoes diced.
- Ready to be served as snack.
