Mexican Buns / Coffe Buns


In Indonesia, Mexican Buns (Roti Boy) has many fans. I am also fan of Mexican Buns (Roti Boy). Now, I have tried to make Mexican Buns with topping chocolate (original with coffee). I love buns with potato, I didn't add bread improver.




Ingredients :
  • 300 gr bread flour.
  • 3 tbsp melted butter.
  • 150 gr steamed potato, mashed.
  • 50 gr sugar.
  • 1 egg.
  • 7 gr instant yeast (1 pack).
  • 1/2 tsp salt.
  • Fresh milk cold is required.
Ingredients Topping Mexican Buns :
  • 50 gr unsalted butter.
  • 50 gr icing sugar.
  • 1 egg.
  • 15 gr milk powder.
  • 60 gr coffee/cocoa powder.
Instruction Topping Mexican Buns :
  1. Mix all of ingredients and stir until smooth and soft.
  2. Put into piping plastic and put in freeze until ready to use it.
Instruction :
  1. Mix bread flour, sugar, salt, yeast, melted butter, steamed potato and egg.
  2. Pour fresh milk gradually and knead until smooth.
  3. Shape like ball and put on the bowl and coated with wet clean cloth. Set aside for 1 hour until get double volume than before.
  4. Press the dough and knead until runs out all of air.
  5. Make every buns with 40 gr the dough and set aside for 15 minutes.
  6. Preheat oven 180°C.
  7. Apply the topping on the buns is like spiral.
  8. Baked in to oven for 25 minutes.
  9. Ready to be served hot.
