Carrot Pancake

I had made them , long time ago. Nothing special for our breakfast. I need to change our menu for breakfast. Everyday, before the kids go to school they always eat cereal flake and biscuits or brioche. And every weekend, I always make Rooti, Paratha or Pancake. Now, I make Carrot Pancake, only little variation for our breakfast.

Ingredients :
  • 100 gr all purpose flour.
  • 50 gr sugar.
  • 150 ml fresh milk.
  • 2 eggs.
  • 1/2 tsp salt (a pinch of salt).
  • 1/2 sdt baking powder.
  • 1/2 sdt vanilla.
  • 1 carrot, steamed and mashed.
  • Butter as needed, for spread on frypan.
Instruction :
  1. Pour into bowl flour, sugar, salt, baking powder and vanilla, mix. And add eggs, mix until combine evenly.
  2. Add grated carrot, stir. Pour milk gradually, stirring constantly until combine evenly and you get smooth the dough.
  3. Preheat small frypan with diameter 14 cm and spread little margarine. Pour the dough a steel laddle. Cover with lid of pan until surface dried. Flip pancake and wait for 30 seconds.
  4. Ready to be served with many kind syrup or just eat like that, yummy too.
