Baklava Rolls with Filo Sheets Homemade


Baklava is a sweet pastry made of filo sheets with many layers. Stuffing chopped nuts and sweetened with syrup or honey. It is typical of Middle Eastern Sweets. Filo Sheets is a dough of thin paper sheets. They use for making pastries in Middle Eastern.




Ingredients Filo Sheets
  • 270 grs unbleached all purpose flour.
  • 1/4 tsp salt.
  • 210 ml water, or more if needed.
  • 4 tbsp vegetable oil, + for coating the dough.
  • 1 tsp white vinegar.
Instruction :
  1. In a bowl, mix the flour and salt with a paddle attachment.
  2. In a measuring cup, combine the water, oil and vinegar.
  3. Stir the flour and pour water gradually using a mixer at low speed.
  4. Stir to get a soft dough. If it still looks dried, add a little water (but I don't need).
  5. After smooth and slick, rouded the dough and place it in a bowl. Spread surface with vegetable oil and cover with plastic wrap. Let stand for 90 minutes.
  6. Open plastic wrap and take little the dough as size golf balls.
  7. Sprinkle the board to grind the dough with flour, milled the dough as thin as possible and wide. Don't get nicked.
  8. Set aside the filo dough that has been milled surface and sprinkle with flour. Do it until the dough runs out.
Ingredients Honey Syrup for Baklava :
  • 2 tbsp honey.
  • 200 ml water.
  • 100 grs sugar.
  • 3 cms cinnamon stick.
  • 3 cloves.
  • 2 tsp of grated fresh orange peel.
Instruction :
  1. Combine all of ingredients into a sauce pan with medium flame.
  2. Stir occasionally until sugar has dissolved, for  10 minutes.
  3. Remove from flame and strain cinnamon, cloves, orange peel and allow to cool room temperature.
Ingredients of Baklava :
  • 1 tsp ground cinnamon.
  • 300 grs almond, pistachio, peanuts, cashew nuts, toasted.
  • 150 grs sugar.
  • Filo sheets.
  • 2 tbsp melted butter.
  • Honey syrup.
Instruction :
  1. Preheat oven 200°C.
  2. Combine nuts, sugar, ground cinnamon, melted butter in a food proccesor and pulse until finely chopped. Set aside.
  3. Spread the bottom of baking tray with butter.
  4. Take a sheet of filo, and put wide on the board, sprinkle surface with nuts until cover all of surface. Roll up the filo. Do it until the filo sheets and nuts finish.
  5. Arrange on baking pan and cut into pieces.
  6. Bake in oven until well done. 15 minutes to bake the bottom or until golden brown and 15 minutes to the top until golden brown or mature.
  7. After mature, pour honey syrup on the baklava. Set aside for 30 minutes and ready to be served.
