Had long time, I wanted to learn to make croissant. The French bread, croissant (in English : Crescent). Bread layered, very fragrant and tasty for breakfast and afternoon tea. Finally accomplished also make these croissants. Alhamdulillah, so happy.
Ingredienti :
- 350 grs strong flour/manitoba flour + 150 grs all purpose flour.
- 60 grs sugar.
- 10 grs milk powder.
- 12 grs salt.
- 100 grs butter environment.
- 25 grs fresh yeast.
- 230 grs of cold water.
* 250 grs butter for stripping.
* Fusing : liquid milk o yolk.
Instruction :
- Pour in a bowl the flour, sugar, salt, butter, yeast and milk powder, mix until blended.
- Pour cold water gradually while kneaded until not sticky to the touch.
- Sprinkle the table with a little flour to knead the dough until it is completely smooth and forms a ball.
- Then put upside down, press a form a quadrilateral.
- Wrap with plastic wrap and store in refrigerator for 2 hours. The dough should not swell.
- Remove from refrigerator.
- Sprinkle the table with a little flour to grind and shape the dough rectangle.
- Put the butter, and fold once.
- Milled to flat. Fold 2 times (right and left to centre) and milled to flat.
- Then cut the dough into triangles.
- Rolls and be filled with chocolate, custard or cheese (to taste what you like).
- Brush the top with milk or yolk.
- Preheat oven 180°C, bake until golden brown.
