Coconut Milk Rice (Betawi)

I've been wanting to cook Nasi Uduk (Coconut Milk Rice), just now realized that desire. But no problem, better than nothing. I cook Nasi Uduk typical Betawi. Betawi or Batavia is a clan and living in Jakarta. The Nasi Uduk is a dish of Betawi Clan. Consists of Nasi Uduk are Rice, Coconut Milk, and side dishes are omelet, meat stew with soy sauce, fried chicken and etc. But I prepared Nasi Uduk with Beef Stew Soy Sauce Betawi dan Chicken with Fried Cococonut Grated.

Ingredients :
  • 500 grs rice, washed and drained.
  • 500 ml coconut milk.
  • 2 bay leaves.
  • 2 pandan leaves, binded.
  • 1 stalk lemongrass, crushed.
  • 1 tsp ground coriander.
  • 1 tbsp salt.
Instruction :
  1. Washed rice and drained.
  2. Boiled coconut milk with bay leaves, pandan leaves, lemongrass, coriander powder.
  3. After boiling, pour rice into coconut milk with rice less than vertebra finger on the rice.
  4. Cook with low fire until coconut milk is absorbed and then steam until cooked.
  5. Remove and ready to be served with some side dishes.
